Składniki:
1 łyżeczka oleju kokosowego

1 duży batat/2 mniejsze, obrany i pokrojony w kosteczkę
1 średnia cebula
500 ml bulionu warzywnego
400 ml mleczka kokosowego
250 g średniej wielkości krewetek
100 g szpinaku świeżego
garść kolendry
1 limonka
pieprz, sól i ostra papryka do smaku
Przygotowanie:
W garnku rozgrzać olej, dodać pastę curry i podsmażać 3 minuty, cały czas mieszając. Dodać cebulę i batata (cały czas smażyć i mieszać), po kilku minutach wlać bulion i zagotować. Gotować wszystko około 10 minut, wlać mleko kokosowe, poczekać aż się zagotuje, zmniejszyć ogień i gotować jeszcze 5 minut. Dodać krewetki, po kilku minutach zdjąć z ognia, wrzucić szpinak, wycisnąć sok z limonki, doprawić pieprzem, solą i papryką według potrzeby. Rozlać do talerzy (3 porcje), posypać kolendrą i jeść!
